Strategies to get the ball out of defence?

Under 12's and just learning positioning.

When bringing the ball out of defence the GD and WD tend to crowd the defensive half (always asking for the short pass or standing behind their players) then the GA, C and WA all try to come in and help but end up making it more crowded. Do you have any set position ideas or advice I should pass on to my players?

Try having a set play in action. I tried it with my 12's last year and it worked perfectly. For example, the Gk takes the pass and GD recieve and so forth and show the girls where they need to stand and where they will recieve the passes. You will be surprised at how well it works and all players will know where everyone is and that should reduce your crowding!
