NOT a full team

How do I go about playing when we only have 5 players?

with a lot of energy!!!  playing with 5 is ALWAYS tough.  you drop both your wings as you dont have a choice, and your GS has to come out and help.  Center passes use your GD as well as the GA, but know that it will be tough as you will have at least 2 defence players on each player...they are going to have to work hard to get free.  but it is doable.  the team will learn that just passing is no longer an option....they have to pass and then reoffer (ie be an option for the next pass).  they will be exhausted by the end, so you will have to proably interchange the GD/GK and GA/GS to give them a break.  your C (unless she can also shoot or defend) is probably stuck there the whole game, so i hope she is super fit, and its not too hot a day.  if you are playing for a club, you can go and borrow players from lower divisions.  you can do this twice per player, but after one player has played twice for a particular team they now have to stay in that team.  or try and get more subs to cope with the shortfall.

good luck.
