Defend a long goal shooter

how do I defend a long goal shooter who only takes a high ball over the head

You can try keeping the player out of the shooting circle. If they move backwards to catch the ball try blocking their way, eg standing behind them so the can`t move backwards. Although with this you have to time it right or a straight pass can be given directly to them.
