I would set up two teams and have them ruck against each other. Say that each team has to hold their ruck for 5 seconds to win. Give them pointers on attacking the weight bearing parts of their opponent, etc.
We have been coached to aim for 'hooking' points, behind the knee etc. A smaller person will struggle to shift a bigger one but by lifting ONE leg at the knee, can destabalise them.
Also, look in to other sports such as judo. Remember that your players should be aiming to stay on their feet and always go 'through the gate'.
