One variation i use for teenage players is for both the ball carrier and the player that touches him to do 1 push up then attack the ball,(semi live ruck)
or one that has only 3 goes with the ball, and then a hand over, the team that lost the ball must have 2 players kneel down at one end (this creates an overlap) but players are allowed to rise and rejoin the game after 3 passes...also if a try is scored all players of the scoring team must be on more than 10 meters from the try line, then attack the other try line.

Also dont forget you can do a lot just by changing the size of the availible playing area. Narrow it up to force depth, then widen up to open gaps.
