The Six Stages of Rugby (see tab above) have been written specifically with young inexperienced players in mind. You will also find various tag rugby DVD's that take the young player through an introduction to rugby skills in a progresive manner.

IRFU rugby website has a section "Club and Community" and there is a very good Tag Rugby section there.
