one way to make your players stay onside is to add a condition into the touch game that the attacking player is not allowed to pass the ball once tagged until all the defending players form a line onside, this will get your player used to getting back foot and encourage the players to get used to the rule, while making the game more free-flowing .
Referee the game like a RL ref, facing the attacking team, and retreat behind the tackle calling out BACK TO ME. If anyone stays offside, when the ball comes out again tell them they`re offside and they can`t touch the ball carrier (LEAVE HIM usually works). Play advantage and manage the players` behaviour with good communication. And don`t sweat it too much, they`re only U8s. They`ll get there.
