After controlling a ball there are basically three things to do. Pass, shoot or dribble/run with the ball. So any of these could be the next action. But instead of the player serving to himself how about three players in a triangle say 5-10 metres apart have 1 serve to 2 who controls the high ball and passes to 3. he/she picks the ball up and serves to 1 and so on.
