Planning to do Level 1 to help out occasionally with coaching my kids teams.My sons U17s are bottom of the league and very limited if enthusiastic players. Any ideas of simple coaching ideas/tactics to increase their chances against the better teams. Particularly weak in midfield and up front.Also I have not taken a session before, any tips of how to kick it off.

If I read it correctly, you said they are not very enthusiastic? Its difficult at U17s so I would highly suggest that you change your focus onto trainings and making them as fun as you can!
Have fun competitive games in training, playing against each other with fun little forfeits for the losing team. This will motivate players to come training. And if they come training then they will improve. Try not to focus everything on winning those matches!
