If your players are old enough, you can teach them the difference between zone defense and man to man defense.
I like instructing half my defense to play zone defense (that helps to protect the 6, since they are not marking anyone specifically) and then the others are marking man to man. This requires good communication as to whom is going to clear the ball. (Have players shout of MINE! or GOT IT! before clearing the ball.
To help them use their heads more, line up about 20 balls near the corner arc and have your primary corner kick taker lob them into the box. Count a header that clears the ball as 3 points, and a volley off the foot at 1 point. The player with the most points after 5 minutes (or x minutes) wins a prize.
