The best and most simple variations of off-spin is pace. If you can vary your pace slightly you can very easily deceive the batsmen. And by varying pace you are also varying how much the ball will spin. ie Slower balls turn further.

Another trick is to also vary how far behind the crease you bowl the ball. Mix this with varying pace and you will create havoc for the batsmen.

There are other far more technical methods of variations but thats a question for another day.
