When bowling off-break, the batter will likely try to play with the spin, therefore hitting it into the leg-side for a right hander. Therefore a predominately leg side field may be best if you`re bowling at the stumps.
With a leg-side field, the batter may try to look to play through the off-side where there is more space, however playing against the spin will bring in opportunities for edges and LBW shouts.
