Start with 2 players, 1 ball.
Throw the ball with a single bounce at receiver, receiver catches the ball.
Then, thrower bounces the ball and receiver controls the ball with any body part (not including the hands).
Next, add a 3rd player, receiver must play the ball using any body part (except hands) to the 3rd player, who then throws the ball to one of the other players and so on.
Next, try to get them to continually move the ball like a typical headers and volleys game except that for younger players the ball is allowed to bounce (for older players, 11 & up, progress to not allowing the ball to bounce).
Focus on controlled touches once they are using their knees, feet, head etc.
Show them how to keep on their toes, adjust their feet, ready to play the pass.
Any type of pass in the air is valid as long as it is controlled and reaches its target.
